Floral and exotic, lychee is a tropical fruit native to southern China. Recognizable by its rough and flaky pink or red rind, lychee has a translucent white flesh, fragrant and sweet. In aromatic terms, the taste of the lychee is similar to that of the rose but also to that of the strawberry or the muscatel. In France, the full season of lychee, mainly from Madagascar and Reunion, runs from November to January. Outside of these months, this winter fruit is eaten as syrup or in tins. But we can also flavour our preparations with its delicate taste thanks to the natural lychee flavouring!
