Gougère with fresh cheese, salmon and organic lemon flavouring

For the gougères :

  • 150g flour
  • 3 eggs 80g of butter
  • salt, pepper & nutmeg
  • 250ml water/milk (half & half)

For the filling :

  • 75g smoked salmon
  • 100g of fresh cheese
  • 5 drops of organic lemon flavouring

Preparation:

  1. In a saucepan, heat the milk/water mixture with the salt and the butter cut into pieces over low heat and let it melt.
  2. Remove from the heat and add the flour in one go and mix quickly.
  3. Then put back on low heat for 1 minute while continuing to mix to obtain a smooth paste.
  4. Remove from heat and add one egg at a time, mixing each time to ensure it is well absorbed into the dough.
  5. Repeat the operation for the 4 eggs.
  6. Finally, add salt, pepper and nutmeg.
  7. Mix everything together. Using a spoon, form the gougères and place them on a baking sheet covered with parchment paper, place in the oven at 180° for 15 minutes, then turn off the oven and let the gougères dry out for another 20 minutes.
  8. In a bowl, mix the fresh cheese and the smoked salmon, previously cut into pieces.
  9. Add the drops of organic lemon flavouring.
  10. Add salt and pepper.
  11. Cut the cooked gougères in two and garnish with the preparation.
