Lemon Moelleux with Coconut and Lime flavors

  • 3 eggs
  • 125g of sugar
  • 200g of butter
  • 250g of flour
  • 1/2 packet of yeast
  • 2 untreated yellow lemons
  • 1 teaspoon coconut flavoring
  • 1/2 teaspoon lime flavoring

Preparation:

  1. Cut 180 g of butter into small pieces in a bowl and soften in a double boiler. Wash the 2 lemons.
  2. Using a peeler, remove the zest from the first lemon and chop it finely. Cut the second lemon into thin slices.
  3. Set aside.
  4. Pour the sugar into the softened butter and whisk to obtain a creamy consistency.
  5. Add eggs one at a time, mixing well each time.
  6. Add the flavourings.
  7. Then add flour, yeast, 1 pinch of salt and chopped zest little by little.
  8. Stir well.
  9. Preheat oven to 210°C (T. 7) Line a cake pan with buttered parchment paper on both sides.
  10. Pour the batter into the pan and place the reserved lemon slices on top, overlapping them slightly. Place in the oven.
  11. After 10 minutes of cooking, lower the thermostat to 5 (150°) and continue cooking for 35 minutes.
  12. Turn out the cake as soon as it comes out of the oven and let it cool on a rack.
