3 tablespoons of olive oil
1 small zucchini
400gr of peas
800ml of water
Salt and peper
4 or 5 dropes of Mint flavoring
Add the peas, salt and pepper.
Add the water
Boil for 12 minutes. The vegetables will not necessarily be cooked completely, but they will continue to cook in hot water until they cool down.
Allow to cool completely to room temperature and then chill before proceeding.
It is possible to do it the day before for the next day.
When the soup is cold, blend it with a hand blender.
Add the drops of mint flavouring.
